Pineapple Crumb bars
Description
Pineapple Crumb Bars start with a crust and crumb mixture blending flour, unsweetened shredded coconut, granulated and brown sugars, baking soda, baking powder, and salt. Melted butter binds the mixture into coarse crumbs. One cup is set aside for the crumb topping, while the remainder is pressed into an 8-inch square pan to form a firm base. The filling consists of canned crushed pineapple combined with sugars, cinnamon, vanilla or coconut extract, and cornstarch to create a sweet, thickened fruit layer. This filling spreads evenly over the crust before sprinkling with reserved crumb topping. Baking at 375°F until golden and slightly browned on top yields bars with a tender, moist center and crunchy coconut crust and topping. Cooling and refrigeration after baking help the bars set fully before cutting. These bars offer a tropical twist with the coconut and pineapple pairing and balance sweetness with mild spice from cinnamon. They are convenient for make-ahead desserts or casual snacking, providing a moist and textured bite in every piece.
