Pineapple Fried Rice (Thai)

Thai Pineapple Fried Rice combines day-old jasmine rice with sweet pineapple chunks, crisp vegetables, and an aromatic garlic-onion base. The dish is flavored with a choice of sauces including oyster and fish sauce or soy sauces for savory depth, and finished with green onions for freshness. The recipe can be customized with protein additions like chicken or shrimp and incorporates a balance of caramelized and juicy textures.

Description

Pineapple Fried Rice starts by heating oil in a wok and briefly sautéing minced garlic and chopped onions to release their fragrance. Diced red bell pepper and frozen peas are then added to provide sweetness and texture contrast. Day-old jasmine rice is stirred in with a flavorful sauce mixture that may include oyster sauce, fish sauce, soy sauce, or a Thai seasoning blend, depending on preferences. The rice is cooked until the grains are coated and begin to caramelize slightly, creating a mix of smoky and sweet taste notes. Fresh or canned drained pineapple pieces are folded in last to add bursts of juiciness and sweetness that contrast with the savory base. Green onions tossed through offer a sharp green flavor to finish. The dish can be made with meat or egg added during the cooking process, making it versatile for different dietary needs. Using day-old rice helps avoid clumping and ensures a proper fried rice texture. This recipe reflects home-cooked Thai-style fried rice with layers of texture and flavors from ingredients and sauces.

Notes

  • Add 150g chopped chicken or prawns mid-way through onion cooking for protein.
  • Make egg separately as a scrambled omelette, chop, and stir in at the end if desired.
  • Use day-old jasmine rice to prevent sticky fried rice; freshly cooked rice tends to clump.
  • Freeze freshly cooked rice for an hour, then thaw to simulate day-old rice in a pinch.
  • Keep cooked rice frozen in portions for convenience in fried rice dishes.
  • Use fresh pineapple for best texture; canned pineapple can be substituted drained.
  • Choose among sauce options for variations: oyster + fish sauce for authentic, oyster + soy sauce for home style, or soy + Thai seasoning.
