Ingredients to muddle:

  • 2 oz. pineapple juice 100%
  • 1 lime quartered
  • 1/2 cup pineapple fresh, chunks
  • 4 lices jalapeño fresh

Rest of ingredients for the drink:

  • 4 oz. pineapple juice 100%
  • 1/2 oz. agave nectar or blue agave
  • 1 lime juiced
  • sparkling water or ginger ale, optional for fizz
  • ice cubes

Instructions

  1. Wet the rim of your glass with a slice of a juicy lime and gently rotate the rim into the salt to coat the edge of the glass evenly. Fill the glass with ice cubes and set aside.
  2. Then, gently muddle the pineapple, limes and jalapeño with ~2 oz. pineapple juice for ~30 seconds – 1 minute to release the juices and oils.
  3. Pour these juices (along with some of the jalapeño seeds if you really like it spicy) into your prepared cocktail glass.
  4. Add in the remaining pineapple juice, fresh lime juice and agave nectar. Give it a gentle stir.
  5. Add a splash of sparkling water (optional) Garnish as desired: lime wedge, pineapple chunk, jalapeño round.
