Ingredients
Ingredients to muddle:
- 2 oz. pineapple juice 100%
- 1 lime quartered
- 1/2 cup pineapple fresh, chunks
- 4 lices jalapeño fresh
Rest of ingredients for the drink:
- 4 oz. pineapple juice 100%
- 1/2 oz. agave nectar or blue agave
- 1 lime juiced
- sparkling water or ginger ale, optional for fizz
- ice cubes
Instructions
- Wet the rim of your glass with a slice of a juicy lime and gently rotate the rim into the salt to coat the edge of the glass evenly. Fill the glass with ice cubes and set aside.
- Then, gently muddle the pineapple, limes and jalapeño with ~2 oz. pineapple juice for ~30 seconds – 1 minute to release the juices and oils.
- Pour these juices (along with some of the jalapeño seeds if you really like it spicy) into your prepared cocktail glass.
- Add in the remaining pineapple juice, fresh lime juice and agave nectar. Give it a gentle stir.
- Add a splash of sparkling water (optional) Garnish as desired: lime wedge, pineapple chunk, jalapeño round.
