Pineapple Margaritas Recipe
Description
The Pineapple Margaritas start by pureeing fresh pineapple chunks, ensuring a smooth consistency to avoid pulp or fibrous bits. The puree mixes with white tequila, triple sec, and freshly squeezed lime juice, creating a balanced blend of tropical sweetness and citrus tartness. A sweet and spicy salt rim made from sea salt, sugar, and cayenne pepper adds a nuanced flavor contrast. The margarita is chilled with ice and served garnished with a fresh pineapple slice.
This recipe yields enough pineapple puree for four cocktails and can be scaled easily for larger groups by using volume measurements. Depending on the sweetness of the pineapple, the triple sec amount can be adjusted slightly to suit taste. The fresh fruit base gives a textured but smooth finishing mouthfeel, differentiating it from pre-made mixes.
Ingredients
- 2 ounces pineapple puree from ¼ fresh pineapple
- 2 ounces white tequila
- 1 ounce triple sec
- 1 ounce lime juice fresh
Sweet and Spicy Salt
- 1 teaspoon salt sea salt
- 1 teaspoon sugar
- ½ teaspoon cayenne pepper
Instructions
- Cut off the top and bottom of a pineapple and then cut it into 4 equal pieces. Use one piece then save the rest for another use. Slice off the peel and the hard inner core, chop the pineapple, and then put it into your blender. Blend on high until smooth. (Note: if you don't have a high-powered blender, you may want to strain the puree so there are no hard bits in it.)
- Mix the Sweet and Spicy Salt ingredients together in a small dish. Run a cut lime around the rim of a glass then dip the rim into the salt. Fill the glass with ice.
- Put a handful of ice into a cocktail mixer or glass jar, add 2 ounces of the pineapple puree, the tequila, triple sec, and lime juice and stir until cold.
- Strain the pineapple margarita into the glass and garnish with a slice of pineapple.
Notes
- This recipe makes enough pineapple puree for about 4 cocktails; scale up proportionally for parties.
- Use fresh pineapple for sweetness; adjust triple sec amount if your pineapple is less sweet.
- If you lack a high-powered blender, strain the puree to avoid fibrous bits.
