Pineapple Mojito

Refreshing pineapple mojito with fresh lime. This cocktail is perfect summer sipper by the pool or anytime you want to feel like you are on a tropical island.

Ingredients
- 1/2 cup of fresh pineapple chunks
- 2 slices lime
- 1 spring of mint 8 leaves
- ice
- 2 oz white rum
- 1/2 oz sugar free simple syrup
- 3 oz soda water

Instructions
- In a glass of choice muddle the pineapple and lime until the juice is released.
- Add the mint and muddle a couple more times.
- Add ice.
- Then add rum, simple syrup, and top it off with soda water.
- Stir and enjoy.
Notes
- Add a couple pieces of pineapple in for additional color/garnish.
- To make simple syrup add one cup of water to one cup of sugar alternative like monk fruit in a saucepan. Simmer until sweetener is clear. Cool completely before adding it to the mojito.
