- Ice cubes

- extra mint leaves

Instructions
- Remove the dragon fruit from the freezer, place it in a bowl, and let it sit for 10 minutes before using.
- Place dragon fruit cubes in the bottom of your highball cocktail glass and use a muddler to soften the dragon fruit cubes until you get some juice out of the cubes and the dragon fruit is smooth.

Notes
- Availability - You should be able to find frozen dragon fruit cubes at large grocery stores, as well as Target, Costco, and Amazon.
- Plan Ahead - If you can't find them locally, you can cut up the dragon fruit and freeze it ahead of time so that the frozen dragon fruit cubes are ready when you are ready to prepare the mojitos.
- Clear Rum - To get the beautiful color of this mojito, you must use clear rum and not gold rum, dark rum, or black rum.
- Don't Skip The Garnish - Since these dragon fruit mojitos make such a pretty presentation, don't skip the garnish because it adds to the drink's beauty.
