Pineapple Orange Whip Dessert

  • 1 teaspoon coconut oil
  • 25 large marshmallows or approximately ½ a 12 ounce bag
  • 1 ounce Cool Whip tub
  • 6-7 ounces pineapple orange juice concentrate or approximately ½ a 12-ounce can

Instructions

  1. Bring a 12 ounce can of pineapple-orange concentrate to room temperature.
  2. Heat a non-stick pot over medium-low heat. Add 1 teaspoon coconut oil and 25 large marshmallows. Stir frequently, until completely melted. This will take around 10 minutes or so. Be patient, as low and slow is the way to go here.
  3. Once the marshmallows are completely melted, add 6 (or 7) ounces of the room temperature pineapple orange juice concentrate. (Seven ounces will provide more tartness). If the marshmallows start getting stringy in appearance when you add the juice concentrate - don’t panic! Once the concentrate heats up both ingredients will combine smoothly.
  4. After the marshmallows and pineapple orange juice concentrate have completely combined, remove from heat and transfer to a lidded container. Let cool to room temperature.
  5. Once cooled, add in the Cool Whip, folding until completely combined. Refrigerate for at least 4-5 hours or overnight.
  6. Scoop and serve topped with graham crackers for a pleasing crunch.

Notes

  • Keeps in the refrigerator in a covered container for up to 5 days.
