Pineapple Rice
Description
Pineapple Rice is prepared by sautéing diced onion and minced garlic in coconut oil until translucent and aromatic. Uncooked long grain rice is added with ground cumin and salt, then simmered in water until tender, absorbing the flavors. Once cooked, diced pineapple, raisins, and almonds are gently placed atop the rice with pineapple juice if desired, then covered to allow flavours to meld. Finishing with fresh cilantro adds freshness and color.
The resulting rice offers a mild sweetness from pineapple and raisins balanced by the toasted almonds’ crunch and the earthiness of cumin. The coconut oil imparts a subtle tropical richness, while the cilantro refreshes the palate. The texture contrasts between soft cooked rice and the crispness of nuts and fruits create interest.

Ingredients
- 1 tablespoon coconut oil
- 2 cloves garlic minced
- 1/2 onion diced
- 1/4 teaspoon cumin
- 1.5 cups of water
- 1 cup long grain white rice uncooked
- 1 pineapple peeled, cored, and diced
- 1 tablespoon pineapple juice optional
- 1/4 cup raisins
- 1/2 cup cilantro roughly copped
- 1/2 cup almonds roughly copped
- 1 teaspoon kosher salt
Instructions
- heat the coconut oil in a medium size pan, over medium heat
- add the onions and cook them until they are transparent, about 2 mins
- add the garlic and cook until fragrant, about 2 mins
- add the rice, and stir
- add salt, cumin and stir
- add the water and bring to a boil
- when the water is boiling, reduce heat to low, cover and cook util rice is tender
- when the rice is cooked, add the pineapple juice, the pineapple, almonds and raisins (do not stir), cover and leave it covered for about 10 mins
- after 10 mins, add the cilantro and stir to combine
