Description

Pineapple Rice is prepared by sautéing diced onion and minced garlic in coconut oil until translucent and aromatic.   • 1 tablespoon coconut oil
  • 2 cloves garlic minced
  • 1/2 onion diced
  • 1/4 teaspoon cumin
  • 1.5 cups of water
  • 1 cup long grain white rice uncooked
  • 1 pineapple peeled, cored, and diced
  • 1 tablespoon pineapple juice optional
  • 1/4 cup raisins
  • 1/2 cup cilantro roughly copped
  • 1/2 cup almonds roughly copped
  • 1 teaspoon kosher salt

Instructions

  1. heat the coconut oil in a medium size pan, over medium heat
  2. add the onions and cook them until they are transparent, about 2 mins
  3. add the garlic and cook until fragrant, about 2 mins
  4. add the rice, and stir
  5. add salt, cumin and stir
  6. add the water and bring to a boil
  7. when the water is boiling, reduce heat to low, cover and cook util rice is tender
  8. when the rice is cooked, add the pineapple juice, the pineapple, almonds and raisins (do not stir), cover and leave it covered for about 10 mins
  9. after 10 mins, add the cilantro and stir to combine
