Description
Pineapple Sunshine Cake combines a boxed yellow cake mix with eggs, oil, and crushed pineapple including its juice, which adds moisture and pineapple flavor to the cake. The cake batter is baked in a 9x13 pan until a toothpick inserted in the center comes out clean.
Once cooled, the cake is topped with a frosting made by folding together whipped topping, instant vanilla pudding mix, and an additional can of crushed pineapple with juice. This frosting is creamy, lightly sweetened, and carries the fresh pineapple taste, complementing the cake's texture.
The cake serves as a refreshing dessert with a fruity note. Ingredients
Cake:
- 1 yellow cake mix
- 4 egg
- 1/2 cup neutral cooking oil I used vegetable oil, generic cooking oil
- 1 crushed pineapple with juice, 8 oz can
Frosting:
- 1 whipped topping thawed, 8 oz container
- 1 instant vanilla pudding mix small box
- 1 crushed pineapple with juice, 8 oz can
Instructions
- Preheat oven to 350 degrees. Spray a 9x13 pan with cooking spray.
- In a large bowl, combine cake mix, eggs, oil, and 1 can of crushed pineapple with the juice. Mix well.
- Pour into prepared baking pan and bake for 25-30 minutes, or until toothpick inserted in center of cake comes out clean. Allow to cool completely on a wire rack.
- In a medium sized bowl, fold together whipped topping, box of vanilla pudding, and 1 can crushed pineapple with the juice. Spread over the top of cooled cake. Enjoy!
Notes
- Optionally reserve a small amount of pineapple from the frosting to sprinkle over the finished cake for added texture and flavor.
