Ingredients

  • 1/4 cup butter or margarine
  • 1 cup brown sugar packed
  • 20 oz pineapple juice reserved, slices in juice, drained
  • 6 oz maraschino cherries without stems, drained
  • 1 yellow cake mix
  • vegetable oil called for on cake mix box
  • egg called for on cake mix box

Instructions

  1. Heat oven to 350°F (325°F for dark or nonstick pan).
  2. Place the butter in a 13X9 baking dish.  Please it in the oven until the butter is fully melted.
  3. Sprinkle brown sugar evenly over butter.
  4. Arrange pineapple slices on brown sugar, next place a cherry in center of each pineapple slice, and arrange remaining cherries around slices; press gently into brown sugar.
  5. Add enough water to reserved pineapple juice to measure 1 cup.
  6. Make cake batter as directed on box, substituting pineapple juice mixture for the water.
  7. Pour batter over pineapple and cherries.
  8. Bake for 40-50 minutes or until toothpick inserted in center comes out clean.
  9. Immediately run knife around side of pan to loosen cake from the pan.
  10. Place heatproof serving plate upside down onto pan; turn plate and pan over.
  11. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake; remove pan. Cool 30 minutes.
  12. Serve warm or cool and enjoy!
  13. Store any leftover cake, covered, in the refrigerator for up to 5 days.
