  • 1 Pineapple cake mix Can use yellow if you wish, boxed
  • ½ Cup neutral cooking oil generic cooking oil
  • ½ Cup pineapple juice
  • 3 egg large

Ingredients for Filling:

  • 1 tick butter softened, 4 oz
  • 8- oz. cream cheese softened
  • 1 teaspoon vanilla extract
  • 1 Cup powdered sugar plus extra for dusting tops
  • ½ Cup pineapple drained well, crushed

Instructions

Instructions for cookies:

  1. Preheat oven to 350 degrees.
  2. Line cookie sheets with parchment paper.
  3. In large bowl, use your mixer to combine cake mix, oil, pineapple juice and eggs. Mix until thoroughly combined.
  4. Drop heaping tablespoons of batter onto cookie sheet, keeping them about 3 inches apart.
  5. Bake on center rack of oven approx. 10 min. or until browned.
  6. Remove from oven and allow to cool in pan on baking rack.
  7. After cooled, spread cream filling (recipe follows) heavily on half of the cookies. Place remaining cookies on as tops and dust lightly with powdered sugar.

  1. Cream butter, cream cheese and vanilla until fluffy.
  2. Add powdered sugar and mix well.
  3. Fold in pineapple.
