Ingredients
- 1 Pineapple cake mix Can use yellow if you wish, boxed
- ½ Cup neutral cooking oil generic cooking oil
- ½ Cup pineapple juice
- 3 egg large
Ingredients for Filling:
- 1 tick butter softened, 4 oz
- 8- oz. cream cheese softened
- 1 teaspoon vanilla extract
- 1 Cup powdered sugar plus extra for dusting tops
- ½ Cup pineapple drained well, crushed
Instructions
Instructions for cookies:
- Preheat oven to 350 degrees.
- Line cookie sheets with parchment paper.
- In large bowl, use your mixer to combine cake mix, oil, pineapple juice and eggs. Mix until thoroughly combined.
- Drop heaping tablespoons of batter onto cookie sheet, keeping them about 3 inches apart.
- Bake on center rack of oven approx. 10 min. or until browned.
- Remove from oven and allow to cool in pan on baking rack.
- After cooled, spread cream filling (recipe follows) heavily on half of the cookies. Place remaining cookies on as tops and dust lightly with powdered sugar.
Instructions for Filling:
- Cream butter, cream cheese and vanilla until fluffy.
- Add powdered sugar and mix well.
- Fold in pineapple.
