Pininyahang Manok sa Gata
Description
Pininyahang Manok sa Gata features chicken pieces marinated in pineapple juice, then sautéed with aromatics including onion, tomato, and garlic. The marinade is simmered with coconut milk, fish sauce, and pineapple chunks, infusing the dish with a mild sweetness alongside the richness of the coconut. Vegetables like sliced carrots and colorful bell peppers are added toward the end, providing freshness and texture contrast. This dish is typically served as a main course with rice, where the creamy sauce complements the grains well.
The cooking method involves a slow simmer to soften the chicken and meld flavors thoroughly without losing the distinct pineapple character. The combination of fish sauce and black pepper adds a subtle savory depth, balancing the sweetness. The bell peppers and carrots add a crisp tender bite. This layered preparation results in a textured, flavorful stew that highlights Filipino flavors through its use of gata (coconut milk) and pineapple.
