Pistachio Fluff
Description
This Pistachio Fluff combines pineapple juice and mandarin oranges with pistachio pudding mix, mini marshmallows, and whipped topping to create a light yet creamy texture. The pudding mix thickens the liquid from the canned fruit, while the whipped topping softens the mix. Additional ingredients like chopped cherries, pecans, and coconut provide bursts of sweetness and crunch, balancing the creamy base.
The recipe involves folding the whipped topping gently into the fruit and pudding mixture, then refrigerating it for at least two hours, which allows flavors to meld and the pudding to fully set. Chilling longer, such as overnight, enhances the consistency and flavor.
Prepared ahead of time, this salad serves well chilled from the refrigerator and can be presented in an attractive serving bowl. It pairs well with casual meals or gatherings, offering a sweet contrast to savory dishes. The notes suggest ingredient substitutions and variations for customization, including sugar-free and lower-fat options.
Ingredients
- 20 ounce pineapple NOT drained, crushed, canned
- 15 ounce mandarin oranges drained very well, canned
- 2 cups mini marshmallows
- 2 instant pistachio pudding mix 3.4 oz packages
- 1/2 cup maraschino cherries drained, rinsed, stems removed and chopped
- 1/2 cup pecans chopped
- 1/3 cup sweetened flaked coconut
- 8 ounce frozen whipped topping thawed, container
Instructions
- In a large bowl, stir together the crushed pineapple, mandarin oranges, mini marshmallows, pudding mixes, cherries, pecans, and coconut flakes.
- Gently fold in the thawed whipped topping until everything is coated.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours before serving. I recommend chilling for longer if you can.
Notes
- Chill the salad at least two hours or overnight for best texture and flavor melding.
- Use a pretty serving bowl for presentation after chilling in a mixing bowl.
- The pudding flavor can be changed to vanilla or cheesecake, but keep the pineapple for proper setting.
- Fruit and nuts can be swapped or omitted to suit preferences.
- For a lighter version, try sugar-free pudding mix and fat-free whipped topping.
- Store leftovers covered in the refrigerator for up to four days.
