Pizookie Recipe

This Pizookie recipe creates a large, soft chocolate chip cookie baked in a cast iron skillet. Its center stays gooey while the edges turn lightly golden, offering a rich, buttery texture complemented by melted chocolate chips. The cast iron method ensures even cooking and a slight crisp at the edges. It's best served warm, allowing the chocolate to stay soft, making it ideal for sharing or enjoying as a comfort dessert.

Description

The Pizookie Recipe transforms classic chocolate chip cookie ingredients into a skillet-baked dessert with a soft, gooey center and gently crisped edges. The dough combines butter, granulated and brown sugar, eggs, vanilla, flour, baking soda, and a pinch of sea salt for balanced sweetness and flavor. Folding in chocolate chips adds bursts of melted chocolate in each bite. Baking in a preheated cast iron skillet insulated by residual butter prevents sticking and helps develop a tender crust.

The result is a warm, inviting dessert with a contrast between the lightly golden edges and the gooey center. It offers a comforting texture and a rich, sweet flavor amplified by the chocolate chips. This single skillet cookie works well for sharing or individual indulgence when served fresh from the oven. Optional toppings such as extra chocolate chips or sea salt flakes add texture and flavor.

To store, keep leftover portions covered at room temperature for up to three days to maintain softness. If using a smaller skillet, the thicker cookie may need extra baking time. Both all-purpose and gluten-free 1-to-1 flours work well, but other flour types might affect texture negatively. Baking until the center is just set preserves the signature gooeyness.

Ingredients

Servings
  • ¾ cup butter unsalted
  • ½ cup granulated sugar
  • 1 cup brown sugar tightly packed
  • 2 egg
  • 2 tsp vanilla extract
  • 2 cups flour all purpose or gluten free flour
  • ½ tsp baking soda
  • pinch salt sea salt
  • 1 cup chocolate chips

Instructions

  1. First, preheat oven to 350 degrees Fahrenheit.
  2. Add butter to a 12 inch cast iron skillet over low heat. Once melted, pour into a mixing bowl. The leftover butter residue prevents sticking in the cast iron skillet.
  3. In the mixing bowl with butter, add sugar and brown sugar. Mix to combine.
  4. Add in eggs and vanilla. Stir to combine.
  5. Then, add in flour, baking soda and sea salt. Stir to combine.
  6. Fold in chocolate chips.
  7. Transfer cookie dough into the cast iron skillet. Spread into one even layer.
  8. Bake for 15 to 16 minutes or until edges are slightly golden and the middle is barely set. It should still look gooey in the middle.
  9. Remove from oven. Top with extra chocolate chips or sea salt if desired. Serve!

Notes

  • Adjust baking time if using a smaller or different skillet size as thickness changes with pan dimensions.
  • The recipe works with regular oven-safe skillets, not just cast iron.
  • Use either all-purpose flour or a 1-to-1 gluten-free flour blend only; other flours may alter results.
  • Ensure the pizookie remains gooey in the center by not overbaking.
  • Store leftovers covered at room temperature for up to three days for best freshness.
