Pizza Cupcakes

Report
Pizza Cupcakes are mini pizza bites made by pressing biscuit dough into a cupcake pan, filled with pizza sauce, mozzarella cheese, and mini pepperonis. Baked until golden, they have a soft, rising crust and a cheesy, savory topping, making them a fun and approachable snack or party food.

Description

This recipe uses canned biscuit dough pressed into a cupcake tin to create a well for pizza fillings. Spoonfuls of pizza sauce fill each dough cup, followed by mini pepperonis and mozzarella cheese. Baking at a moderate temperature allows the dough to rise around the fillings, forming a golden, slightly crispy crust on the outside with a tender center.

The pizza cupcakes deliver concentrated pizza flavor in a convenient finger-food size. The melt of mozzarella with tangy sauce and pepperoni contrasts with the soft biscuit base. Cooling briefly helps them settle and prevents excessive deflation after baking.

The recipe is ideal for involving children in preparation and lends itself to quick baking for easy snacks or dinners. The simple assembly uses common ingredients and minimal steps.

Ingredients

Servings
  • 2 biscuit dough 7.5 oz, 10 count cans
  • 1 cup pizza sauce (store bough or homemade)
  • 1 cup mozzarella cheese
  • mini pepperonis

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a cupcake pan with non-stick spray.
  3. Place a biscuit into each cupcake. Use your fingers to make a well in each biscuit (The kids loved doing this).
  4. Spoon 1 tablespoon of sauce into each cupcake.
  5. Sprinkle the pepperonis and top with the mozzarella cheese (don't go overboard on the cheese, these are going to rise quite a bit. I learned the hard way)
  6. Bake in the preheated oven for 10-12 minutes until nice and golden brown.
  7. Allow the cupcakes to cool about 5 minutes (they will "deflate" some) before serving.

Notes

  • Kids find it enjoyable to help press dough and fill the cups, making this a fun cooking activity.
  • Avoid adding too much cheese, as the cupcakes rise and extra cheese can overflow during baking.
  • Allow cupcakes to cool briefly after baking; they will deflate slightly, improving texture and ease of handling.
