Description

Assembly involves layering noodles with ricotta mixture, savory meat sauce, slices of pepperoni, and shredded mozzarella cheese. Baking at 350 degrees melds the flavors and melts the cheeses into a cohesive dish reminiscent of pizza in lasagna form. It can be served as a main course for dinner or gatherings.
Because a high-sided 9x13 inch baking dish is recommended, thinner standard pans might require making a second smaller lasagna with leftover ingredients. This approach ensures complete layering and allows saving an extra portion for another meal or sharing.
Ingredients
Sauce
- 2 tbsp olive oil divided
- 1 yellow onion chopped
- 3 garlic minced, cloves
- tomato sauce two 29 oz cans
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp oregano dried
- 2 tsp basil dried
Meat filling
- 1.25 pounds ground turkey Italian seasoned
- 8 oz. mushrooms chopped
Lasagna
- 30 oz ricotta cheese
- 2 egg slightly beaten
- 1 tsp salt
- 1 tsp black pepper
- ½ cup Italian parsley chopped
- 9 lasagna noodles cooked
- 6 oz. pepperoni
- 4 cups mozzarella cheese shredded
Instructions
- preheat oven to 350 degrees
- heat 1 tbsp olive oil in a large pot over medium heat
- add in onion and season with 1 tsp salt and 1 tsp pepper, allow to cook for 5 minutes
- add in garlic and cook for an additional minute
- pour in the tomato sauce and season with oregano and basil
- allow to simmer for 15 minutes
Meat filling
- heat 1 tbsp olive oil in a large skillet
- add in the ground turkey and break it up as it cooks
- once the turkey is cooked through remove it onto a plate until later
- add in the mushrooms and allow to cook until softened
- remove to the same plate that the meat is on
Lasagna prep
- combine the ricotta, eggs, salt, pepper and chopped Italian parsley in a mixing bowl
- in a 13 x 9 baking dish spread 1/4 cup of the tomato sauce around the bottom of a baking dish
- lay 3 lasagna noodles to cover the bottom of the baking dish
- spread a 1/3 of the ricotta mixture over the noodles in an even layer
- spread some of the tomato sauce over the ricotta and then top with a 1/3 of the mozzarella cheese
- next, layer a 1/3 of the meat/mushroom mixture and then a layer of pepperoni
- repeat with 3 more noodles and ricotta, mozzarella, tomato sauce, meat/mushrooms and pepperoni twice
- place in the oven and bake for 20 to 30 minutes until cheese is melted and bubbly
- enjoy!
Notes
- Use a high-sided 9x13 inch baking dish to fit all layers properly for this recipe.
- If using a standard baking dish, make a smaller 9x9 inch lasagna with remaining ingredients to save or share.
