Pizza Pasta Recipe
Report
One Pot Pizza Pasta is ready in 30 minutes. Loaded with corkscrew pasta, cheese and pepperoni it's all the flavors of pizza in a pasta recipe.
Share:
Ingredients
- 8 ounces uncooked corkscrew pasta
- 2 cups low sodium chicken broth
- 14 ounces diced Basil, Garlic & Oregano tomatoes (1 can)
- 1 teaspoon garlic powder
- ½ tsp oregano
- ½ cup milk
- 2 cups shredded Mozzarella cheese
- ½ cup mini pepperoni slices
- Shredded Parmesan Cheese for topping
Instructions
- In a large pot bring pasta, broth, tomatoes, garlic powder, oregano and milk to a boil. Cook at a medium boil with lid on pot, stirring frequently, for about 10 minutes or until noodles are al dente. Most of the liquid should have evaporated, if it hasn't remove lid and let pasta cook for an additional few minutes, or until liquid is mostly evaporated.
- Stir in shredded Mozzarella cheese and pepperoni. Stir until melted and combined.
- Top with additional Parmesan cheese if desired and serve immediately.
Notes
- Store leftovers in an airtight container in the fridge for 2-3 days.
- Reheating cheesy pasta in the microwave can result in less-than-desirable dry and oily pasta. So instead, I like to place a portion in a small oven-safe baking dish and cover that with aluminum foil. Then, bake it in a toaster oven until the pasta is heated through. Otherwise, you could lightly sauté the leftovers with a small pat of butter on the stovetop.
- As long as you’re cooking the recipe in an oven-safe dish, you can garnish it and then place it in the oven. A great way to finish the pasta is to cover it with more mozzarella, parmesan, and a sprinkling of mini pepperonis. Then, pop it under the broiler in your oven until the cheese is melty, bubbly, and golden brown.
