Description
These stuffed mushrooms transform large mushroom caps into individual pizza bites. The mushroom stems are removed to create space for a small amount of pizza sauce, topped with mozzarella and pepperoni slices. Baking at a high temperature melts the cheese and crisps the pepperoni edges lightly, with mushrooms softening but holding shape. Freshly ground black pepper and chopped basil add a subtle finishing touch and freshness.
The recipe captures pizza flavors in a smaller, low-carb format by using mushrooms as a base. The contrast between the juicy mushrooms and the gooey cheese with savory pepperoni makes these appealing as finger food. They can serve as party appetizers or a savory snack.
Store leftovers in an airtight container for up to 5 days in the refrigerator. Reheat gently in the microwave or oven to warm through. These stuffed mushrooms do not freeze well due to texture changes in mushrooms from freezing.
Ingredients
- 12 to 15 large mushrooms cleaned and stems removed
- 2 pepperoni sliced, mini, links
- ¼ cup pizza sauce
- 1 cup mozzarella cheese
- black pepper freshly ground
- 1 basil chopped, fresh leaf
Instructions
- Preheat oven to 450℉.
- If you're using a cast iron skillet spray it with cooking spray. Arrange the mushrooms in the skillet.
- Fill each mushroom with about 1 to 2 tsp of pizza sauce. Top each mushroom with 1 to 2 tbsp of mozzarella cheese, then with 2 or 3 pepperoni slices.
- Bake for about 15 to 18 minutes, or until cheese melts and gets a bit golden on top.
- Season with freshly ground black pepper and garnish with basil.
Notes
- Store leftovers in the fridge for up to 5 days in an airtight container; reheat in microwave or oven.
- These mushrooms do not freeze well as freezing changes their texture unfavorably.
