Description
Pizza Stuffed Pasta Shells use jumbo pasta shells cooked al dente as the vessel for a filling made by browning lean ground beef with garlic and diced onion. Dried oregano, diced green bell pepper, seeded ripe tomato, and most of the pepperoni are added to the meat to build pizza-inspired flavors. Mozzarella cheese is stirred in to bind the filling and add creaminess.
Each shell is then carefully filled with the mixture and placed in a baking dish, which is topped with pizza sauce before baking. After initial baking covered with foil to heat through, extra mozzarella cheese and remaining pepperoni are added on top, and the dish is returned to the oven until the cheese melts and bubbles slightly to create a golden finish.
This recipe melds the familiar flavors of pizza into a baked pasta dish that can serve as a hearty main course. The mixture of meats, vegetables, herbs, and cheeses creates a balanced and satisfying filling inside tender pasta shells. Ingredients
- 15 to 18 pasta shells jumbo
- ½ pound ground beef lean
- 2 cloves garlic minced
- ½ onion finely diced
- 1 teaspoon oregano dried
- 4 ounces mini pepperoni or sliced pepperoni, divided
- 1 green bell pepper diced
- 1 large tomato seeded and diced, ripe
- 1 cup pizza sauce
- 2 cups mozzarella cheese divided, shredded
Instructions
- Preheat oven to 350°F. Cook shells el dente according to package directions. Drain and set aside to cool.
- In a medium pan, brown ground beef, onion, and garlic until no pink remains. Drain any fat.
- Add ¾ of the pepperoni and cook about 3 minutes. Finally, add in green pepper, oregano and tomato. Cook about 3 minutes or until green pepper is slightly softened. Remove from heat and stir in ½ cup of mozzarella cheese.
- Fill each shell with the pepperoni mixture (approx 1 ½ tablespoons) and place in a baking dish.
- Top with pizza sauce. Cover with foil and bake 20-25 minutes or until heated through. Remove foil and add remaining mozzarella cheese and remaining pepperoni. Return to oven until cheese is melted and bubbly.
