Description
This recipe starts by tenderizing chicken breasts to uniform thickness for consistent baking. The topping sauce combines passata, chopped spinach, garlic granules, oregano, sea salt, and black pepper, blending herb and savory notes. Sliced green olives add a salty brightness, and grated mozzarella melts to form a golden cheesy layer over the chicken.
The assembled chicken is baked at 200°C (400°F) for 30 minutes, resulting in tender poultry with a flavorful topping that merges pizza-inspired ingredients. The combination creates a dish suitable for a main course with balanced textures and flavors reminiscent of pizza but without dough.
For variation, the topping can be placed inside a pocket slit in the chicken breasts before adding sauce and cheese on top for extra flavor and moisture. Fresh basil sprinkled before serving adds a bright herbal touch.
Ingredients
- 400 g chicken breast
- 4 tablespoon passata
- 30 g spinach chopped
- 30 g mozzarella cheese grated
- 0.5 teaspoon garlic granules
- 1 pinch sea salt
- 1 pinch black pepper
- 0.5 teaspoon oregano dried
- 25 g green olives sliced
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Using a meat tenderiser or heavy rolling pin, flatten 400 g Chicken breast so each one is equal thickness throughout.
- Mix together 4 tablespoon Passata, 30 g Spinach, 0.5 teaspoon Garlic granules, 0.5 teaspoon Dried oregano and 1 pinch Sea salt and ground black pepper.
- Spread the sauce over the chicken breasts and top with 25 g Green olives.
- Cover with 30 g Mozzarella.
- Cook in the oven for 30 minutes.
Notes
- You can stuff the chicken by cutting a slit inside and filling with the sauce and toppings before baking.
- Sprinkle chopped fresh basil over the cooked chicken just before serving for extra flavor.
