Pizzadilla Recipe (Pizza Quesadillas)
Description
This Pizzadilla recipe uses corn tortillas spread with pizza sauce, layered with shredded mozzarella and pepperoni slices, and optionally other pizza toppings. The assembled tortillas are cooked in oil on a pan over medium-high heat until both sides are crisp and golden brown, ensuring melted cheese inside and a crunchy exterior.
The final dish offers the cheesy, savory taste of pizza combined with the portability and crunch of a quesadilla. It’s suitable for a casual meal, snack, or party food where individuals can customize their own pizzadillas with toppings set out in separate containers.
The notes recommend leaving a margin at the edges of the tortillas to prevent sauce leakage during cooking, using nonstick pans for easy cleaning, and having multiple pans ready to cook several pizzadillas quickly. Flour tortillas can be used folded instead of two layered corn tortillas. Leftovers and variations are also discussed.
Ingredients
- 8 corn tortillas
- ¼ cup pizza sauce or marinara sauce
- 2 cups mozzarella cheese shredded
- 24 lices pepperoni
- neutral cooking oil for pan, generic cooking oil
Topping Ideas
- mushrooms sliced
- olive sliced
- sausage cooked
- pepper sliced
- tomato sliced
Instructions
- Place 4 corn tortillas on individual plates. Spread about one-fourth of the pizza sauce onto each tortilla, leaving a bit of margin around the edges so sauce doesn't leak.
- Evenly divide/sprinkle cheese on top of each tortilla, leaving a margin around the edges. Follow with 6 slices of pepperoni on top of each pizzadilla. If desired, add any additional toppings.
- Gently press remaining 4 corn tortillas over each pizzadilla.
- Over medium-high heat, heat enough oil in a pan to lightly coat the surface of pan. Once oil is hot, place one pizzadilla in pan. Cook just until bottom is golden brown and crisp. gently flip with a large spatula and repeat with other side. Slice as desired and serve immediately.
- Gently flip pizzadilla over with a large spatula and brown the other side. Repeat with remaining pizzadillas. Let pizzadillas cool 1-2 minutes, slice, and serve.
Notes
- When assembling pizzadillas, leave a margin around the edges of tortillas to prevent sauce from leaking during cooking.
- Use nonstick pans for easier cooking and cleanup when making multiple pizzadillas.
- Flour tortillas can replace corn tortillas; fill one-half and fold over for a taco shape instead of layering.
- Prepare and serve a variety of toppings in separate containers to allow customization.
- Have two pans heating simultaneously to cook multiple pizzadillas faster.
- Ensure oil is hot before cooking each pizzadilla to achieve a crisp, browned exterior without greasiness.
- Serve pizzadillas with sides such as snack mixes or layered dips for a complete spread.
