Pljeskavica

Pljeskavica, nicknamed the Serbian burger, is a dish of grilled ground meat, very popular in the Balkans.

Ingredients
- 1 lb beef shoulder , chuck, chopped
- 10 oz. lean pork , minced
- 10 oz. lean lamb , minced
- 3 cloves garlic , minced
- 1 small onion , finely chopped
- ¼ cup sparkling water
- 1½ teaspoon salt
- 1 tablespoon paprika (fresh paste or ground)
- ½ teaspoon chili powder (or more to taste)
To serve
- whole scallions , small
- Strips of white onion (or red onion)
- Tomato slices
- Grated white cabbage salad
- green pepper (or red pepper rings)
- ajvar
- Lepinje (or pogaça bread)

Instructions
- In a large bowl, combine the ground beef, ground pork, ground lamb, garlic, onion, salt, paprika and chili powder.
- Add the sparkling water and mix quickly.
- Cover with plastic wrap and refrigerate the mixture for 5 hours.
- Using slightly damp hands, divide the mixture into 8 equal portions and form a ball.
- Flatten each ball and form thin patties about 7 inches (16 to 18 cm) in diameter, or about the size of a small plate.
- Heat a large barbecue or meat grill and cook the pljeskavice for about 7 minutes on each side.
- Serve with fresh whole scallions and/or onion strips, sliced tomatoes, ajvar, lepinje bread or pogaça bread and shredded white cabbage salad, all on the side.
