Polenta

Polenta is a traditional cornmeal porridge from northern Italy that's also popular throughout Europe, including Switzerland, France and Romania.

Ingredients

  • 1 cup polenta , or medium yellow cornmeal
  • 5 cups water
  • 2 tablespoons butter (optional)
  • salt (to taste)

Instructions

  1. In a large saucepan, bring the water to a boil.
  2. Once boiled, gradually pour the polenta into the hot water while whisking to avoid lumps.
  3. Stir the polenta constantly until it begins to thicken, then reduce the heat to its lowest setting.
  4. Cook over low heat for at least 40 minutes or until the polenta begins to pull away from the side of the pan, stirring occasionally with a wooden spoon.
  5. Add butter (optional) and salt (to taste) and stir until melted and incorporated.
  6. Serve immediately.
