Pomegranate Chia Pudding Parfait

The Pomegranate Chia Pudding Parfait layers a creamy chia pudding made with almond milk, maple syrup, and vanilla extract, with fresh pomegranate seeds, sliced almonds, and yogurt. The pudding thickens after chilling, creating a textured, nutrient-rich base contrasted by the crunch of almonds and tart bursts from the pomegranate seeds.

Description

This parfait starts with chia pudding prepared by soaking chia seeds in almond milk mixed with maple syrup and vanilla. The pudding thickens after a resting period in the refrigerator, producing a gel-like, creamy texture from the hydrated seeds. The parfait is assembled by layering dairy or dairy-free yogurt with portions of the chia pudding, fresh pomegranate seeds, and sliced almonds in a glass jar or cup.

The tartness and juiciness of pomegranate seeds contrast with the soft pudding, while the almonds supply a crunchy texture. Vanilla and maple syrup lightly sweeten the pudding, supporting the natural flavors without overwhelming. The parfait can be served immediately or chilled ahead for convenience, making it suitable for breakfast, snacks, or a light dessert.
