Pomegranate Risotto

The recipe for an unusual, yet delicious and sophisticated risotto made with pomegranate.

Ingredients
- 320 gms rice Arborio, Carnaroli or Vialone nano, 11.3 oz
- 2 tbsp onion finely chopped
- 2 tbsp extra virgin olive oil
- 80 ml red wine 1/3 cup
- 120 ml pomegranate juice ½ cup
- 45 gms butter
- 4 tbsp parmigiano reggiano finely grated
- 1 water I used water as I did not want the stock to overpower the delicate flavour of the ingredients, salty, 4 cups, or very light vegetable stock
- pomegranate arils to garnish
- salt to taste
Notes
- Make sure not to wash your rice before cooking it. You need the starch to get a creamy risotto.
