Porcupine Meatballs

Porcupine Meatballs combine ground beef, rice, and seasonings into tender, baked meatballs finished in a savory marinara sauce. The uncooked rice inside the meatballs absorbs moisture as they cook, creating a unique texture that is both tender and slightly chewy. These meatballs bake covered in sauce for 90 minutes, allowing flavors to meld and the rice to cook through evenly. Their hearty texture and flavorful sauce make them suitable for a comforting dinner served over pasta, rice, or on their own.

Description

Porcupine Meatballs feature ground beef combined with uncooked long grain rice and aromatic seasonings like onion, garlic, celery salt, and black pepper. The mixture also contains breadcrumbs and canola oil for binding and moisture. Rolled into 2-inch balls and baked in a covered dish, these meatballs cook slowly in a mixture of marinara sauce, water, and Worcestershire sauce, which infuses them with rich tomato and umami flavors.

The uncooked rice inside the meatballs cooks during baking, absorbing the sauce's moisture and providing a distinctive texture contrast to the beef. This slow, covered baking approach ensures tender meatballs with a balanced flavor profile and a moist interior.

Porcupine Meatballs can be served as a main dish alongside pasta or vegetables, or enjoyed topped with additional marinara sauce. The recipe’s hands-off baking makes it convenient for a filling meal that blends simple ingredients into a robust dish.
