Pork Adobo

Pork Adobo is a savory Filipino stew made by browning pork shoulder chunks and simmering them with vinegar, soy sauce, garlic, bay leaf, peppercorns, and a touch of sugar. The slow simmer tenderizes the meat and develops a tangy, slightly sweet sauce that is reduced to intensify its flavor. This dish’s balance between vinegar’s acidity and soy sauce’s umami makes it distinctive. It is traditionally served over rice to absorb the flavorful sauce.

Description

Pork Adobo combines seared pork shoulder with a cooking liquid of cane vinegar, soy sauce, garlic, bay leaf, black peppercorns, and sugar. The initial browning adds texture and depth, while the low simmer tenderizes the pork and infuses it with the acidic and savory marinade. The recipe calls for a two-stage cooking process, first simmering covered, then uncovered to reduce the sauce to a glaze-like consistency, highlighting the balance of sour, salty, and sweet flavors.

This dish is commonly served hot over steamed rice to soak up the intensely flavored sauce. The pork’s tenderness and well-seasoned sauce create a hearty meal that highlights Filipino cooking traditions.
