Pork and Cabbage Stir Fry
Description
This Pork and Cabbage Stir Fry starts by lightly frying pork belly slices in minimal oil until browned. Aromatics including sliced garlic, ginger, white parts of scallions, and Thai chili pepper rounds are added to the wok briefly to release their fragrance. Hand-shredded and well-drained cabbage accompanies the pork and aromatics for a quick stir-fry.
Light soy sauce brings saltiness balanced with a touch of sugar, then sesame oil is added for its distinctive toasted flavor. The result is tender pork combined with crisp-tender cabbage and a piquant touch of heat and aroma from the chilis and ginger. This dish cooks quickly and is served hot, suitable as a main or accompaniment.
Using fresh aromatics and properly draining cabbage helps maintain texture and flavor. The method emphasizes quick high-heat cooking to preserve the brightness of ingredients.
