Description

Pork and Chicken Adobo features two types of meat — pork belly and chicken pieces — slowly cooked together in a rich braising liquid made from vinegar, soy sauce, oyster sauce, plenty of garlic, bay leaves, and whole peppercorns. First, garlic is sautéed until golden to deepen flavor, then the meats are browned. The liquid is added and boiled before simmering until tender.

The process softens the meats, infusing them with the tangy, salty, and slightly sweet sauce. Brown sugar balances the vinegar's sharpness, while oyster sauce adds umami depth. Once most liquid evaporates, the dish is stirred and finished with reserved fried garlic, creating a flavorful coating.

This adobo is a filling main dish ideal served with steamed rice to soak up the sauce. The combination of pork belly's richness and chicken's lighter texture gives variety in every bite. It is made in a single pot and suitable for sharing.

  • 1 1/2 lbs pork belly chopped
  • 1 1/2 lbs chicken cut into serving pieces
  • 4 pieces bay leaves dried
  • 2 teaspoons black peppercorn whole
  • 1 head garlic slightly crushed
  • 6 tablespoons vinegar white
  • 1/2 cup soy sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons brown sugar
  • 2 cups water
  • salt to taste
  • 3 tablespoons neutral cooking oil generic cooking oil

Instructions

  1. Heat oil in a pan
  2. Once the oil becomes hot, add the garlic. Cook until the color turns golden brown.
  3. Remove the garlic and set aside. Add pork and chicken. Cook for 5 minutes or until the color turns light brown.
  4. Add whole peppercorn, bay leaves, oyster sauce, soy sauce, and water. Let boil and simmer until the meat gets tender.
  5. Add the sugar and stir.
  6. Pour-in vinegar and let boil.Simmer until most of the liquid evaporates.
  7. Add salt to taste. Put-in the fried garlic, stir, and cook for 2 minutes.
  8. Serve. Share and enjoy!
