Pork Belly Fried Rice
Description
This Pork Belly Fried Rice starts with frying diced pork belly until browned and crispy to impart rich, rendered fat. Eggs are cooked in the leftover fat along with white parts of green onions and minced garlic, adding layers of savoriness. Diced green chili and shredded ginger provide mild heat and warmth. Cooked jasmine rice is stirred in and heated through, then seasoned with soy sauce, dark soy sauce, sesame oil, salt, and white pepper to finish. The green parts of the onions add freshness at the end. The result is a balanced fried rice with bold pork flavor, savory seasoning, and a mix of textures.
Ingredients
- 1 cup pork belly diced
- 2 egg
- 2 green chili pepper diced, fresh
- 3 green onions chopped and separated into white and green parts
- 1/2 thumb ginger shredded
- 4 cups rice preferably leftover jasmine rice, cooked
- 1 tbsp neutral cooking oil generic cooking oil
- 1 tbsp soy sauce
- 1 tsp. dark soy sauce
- 1 tsp sesame oil
- 1/2 tsp salt
- white pepper to taste
Instructions
- Cook the pork belly: heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add the pork belly cubes. Fry the pork belly for 2-3 minutes, stirring frequently, until lightly browned and well seared. Remove extra oil and then transfer the pork belly to one half of the wok.
- Add the whisked egg in. Break the eggs. Add the minced garlic and white parts of the green onions. Cook for 30 seconds until fragrant.
- Then place in diced peppers fry for around 30 seconds.
- Add the cooled, cooked rice. Break up any large clumps with your spatula or spoon. Toss and stir fry for 2 minutes, allowing the rice to heat through.
- Add green onion (the green part), soy sauce, sesame oil salt and white pepper . Toss well and serve hot.
