Pork Chops with Stuffing
Description
Pork Chops with Stuffing features boneless pork chops seasoned with herbs such as rosemary and thyme, placed over chopped apples and onions in a baking dish. Preparing the stuffing from a mix, it is spooned on top of the pork, and the dish is baked covered initially to allow flavors to meld and the pork to cook thoroughly. Removing the cover toward the end allows the stuffing to brown slightly. The pork cooks to an internal temperature of 145°F, ensuring juiciness without dryness.
The combination of juicy pork, sweet apples, aromatic onions, and herb-seasoned stuffing presents a comforting meal. The stuffing’s moist texture contrasts with the tender meat and fruit underneath, creating a satisfying balance. This dish can stand alone or be served with simple vegetables or a fresh green salad for a complete meal.
Using a meat thermometer is recommended for best results due to variables like pork chop thickness and baking dish type influencing cooking time. Leftover pork chops with stuffing store well in the refrigerator for 3-4 days, or can be frozen for up to 3 months. When reheating, warming gently covered in the oven helps maintain moisture, though the pork is best served fresh to avoid dryness.
Ingredients
- 1 medium apple chopped
- 1 medium onion chopped
- 4 thick-cut pork chops about 2 lbs. total, boneless
- 2 teaspoons seasoned salt (I use Lawry's)
- 2 teaspoons rosemary or ½ teaspoon dried rosemary, minced fresh
- 1 teaspoon thyme or ¼ teaspoon dried thyme, minced fresh
- 6 ounce stuffing mix plus the water and butter called for on the package, box
Instructions
- Preheat the oven to 400°F. Grease a large baking dish with nonstick cooking spray. Place the apples and onions in the prepared dish. Season the pork chops on all sides with seasoned salt, rosemary, and thyme. Place the seasoned pork chops on top of the apples and onions.
- Prepare the stuffing according to the package directions.
- Spoon the stuffing on top of each pork chop.
- Spray a sheet of aluminum foil with cooking spray. Place the sprayed-side down to cover the dish (this prevents the foil from sticking to the stuffing). Bake, covered, for 25 minutes. Remove the cover and return the dish to the oven for 5-10 more minutes, or until the pork is cooked through and reaches an internal temperature of 145°F. Garnish with additional fresh herbs, if desired, and serve!
Notes
- Use a meat thermometer to ensure pork chops reach 145°F for safe and juicy results.
- Cooking time varies by chop thickness and type of baking dish; metal pans may cook faster than ceramic or glass.
- Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for 2-3 months.
- Reheat in a 350°F oven covered with foil until warmed through; microwaving individual servings is also possible but may dry the meat.
