Pork Fajitas

This recipe prepares pork fajitas by seasoning and cooking strips of pork tenderloin with sautéed bell peppers and onions, served with fresh guacamole made from mashed avocado, lime juice, and diced tomato. The fajita seasoning adds a warm, savory spice to the dish.

Description

Pork Fajitas combine thinly sliced pork tenderloin strips seasoned with fajita spices, cooked until slightly charred, then mixed with sautéed long strips of red and yellow bell peppers and onions caramelized to tenderness. The accompanying guacamole is a fresh blend of mashed avocados, lime juice, diced tomatoes, and green onions seasoned with salt and pepper to balance the flavors. The tortillas serve as a vessel for assembling these components into handheld servings.

The dish offers a textural contrast between the tender pork, soft peppers and onions, and creamy guacamole. It is suitable for casual meals and gatherings, providing a customizable meal option through the tortillas.

The recipe notes that fajita seasoning can be substituted or made at home and that other proteins such as beef or chicken can be used to vary the dish. Nutritional information includes the guacamole component for reference.

Ingredients

Servings
  • 2 medium onion
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 3 tablespoons fajita seasoning or to taste
  • 2 pounds pork tenderloin
  • 2 tablespoons olive oil
  • cilantro for garnish, fresh
  • 1 lime cut into wedges
  • 8 small tortillas

For guacamole

  • 2 avocado
  • 2 tablespoons lime juice from 1 lime
  • 1 tomato diced
  • 3 green onions chopped
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions

  1. Clean and slice the onions into long strips. Slice the peppers into long strips as well. Place peppers and onions in a large bowl, sprinkle 1½ tbsp of the fajita mix over the onions and peppers and toss.
  2. Clean and slice the pork tenderloin into long strips and place in a bowl. Sprinkle the remaining 1½ tbsp of fajita mix over the pork and stir to make sure each piece of pork is seasoned well.
  3. In a large skillet, heat 1 tbsp of the olive oil over medium high heat and add the pork to it. Cook the pork for 5 to 10 minutes until it's fully cooked, and it's slightly charred, but not burned.
  4. Remove the pork from skillet, and wipe the skillet clean.
  5. Add another tbsp of olive oil to the skillet and heat it up. Add the onion and pepper mixture and cook for about 5 minutes until the onion is caramelized and the peppers are soft. Add the pork back to the skillet, mix with peppers and onions and cook for a minute.
  6. To make the guacamole, mash the avocados in a small bowl, then add the rest of the ingredients and stir well.
  7. Assemble the tortillas, add some pork, onion, peppers, and top with avocado. Garnish with cilantro if preferred.

Notes

  • If fajita seasoning is unavailable, taco seasoning or a homemade mix can substitute.
  • Beef or chicken can replace pork tenderloin in this fajita preparation.
  • The nutritional data provided accounts for the included guacamole.
