Pork Guisantes

Pork Guisantes is a stew featuring tender pork sirloin cooked with bell peppers, onions, garlic, and sweet peas in a tomato sauce base. The sauce is enriched with fish sauce and bay leaf, creating a balanced savory flavor with a touch of sweetness from peas and bell peppers. This dish offers a hearty texture and a comforting meal option.

Description

Pork sirloin cut into uniform cubes is first browned with aromatics like garlic and onions. Red bell pepper strips are briefly cooked and set aside to maintain their crispness. The pork is simmered in a tomato and water mixture seasoned with fish sauce and a bay leaf, which imparts a subtle umami depth and herbal note. The dish is cooked until the pork becomes fork-tender and the sauce reduces to a flavorful consistency.

Frozen sweet peas are added near the end to retain their bright color and slight sweetness, and the reserved bell peppers are returned to the pan shortly before serving, preserving their texture. Salt and black pepper adjust the seasoning as needed.

This stew can be served hot as a main dish with rice or other sides. It balances tender meat with fresh vegetables in a gently spiced tomato-based sauce.

For best results, slice the pork against the grain into even pieces to ensure tenderness and uniform cooking.
