Pork Mei Fun
Description
This Pork Mei Fun recipe uses rice noodles that are soaked until pliable then mixed with light soy sauce and a bit of oil to keep them separate and fluffy during cooking. Tender shredded pork is marinated in a mixture of Shaoxing wine, light soy sauce, oyster sauce, salt, white pepper, and cornstarch to enhance flavor and texture.
Stir-frying begins with cooking the pork until colored but not overdone, then garlic and red onion are fried to release their aromas. The soaked noodles and stir-fry sauce are added next, followed by pork and crunchy bean sprouts and chives. Sesame oil is drizzled at the end to add a subtle nutty aroma. The dish is served hot with combined flavors and complementary textures of tender pork, crisp vegetables, and soft noodles.
Ingredients
- 100 g rice noodles mei fun
- 3 tbsp. neutral cooking oil generic cooking oil
- 50 g chives , cut into sections
- 1/4 red onion , shredded
- 2 cloves garlic
- 50 g bean sprout
- 1/2 tsp. sesame oil
Pork And Marinating
- 100 g pork , tenderloin or pork butt
- 1 tbsp. Shaoxing wine
- 1 tbsp. soy sauce light
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 1 tsp. cornstarch
- 1/2 tbsp. oyster sauce
- 1 tsp. neutral cooking oil generic cooking oil
Stir-fry sauce
- 1 tbsp. soy sauce light
- 1/2 tsp. dark soy sauce
- 1/2 tbsp. oyster sauce
- 1 tbsp. water
- 1/2 tsp. sugar
Instructions
- Pre-soak the rice noodles for around 20 to 30 minutes until soft and then drain. If you are in a hurry, soak in warm water for 10 minutes.
- Mix the rice noodle with ½ tsp. dark soy sauce teaspoon of cooking oil until fluffy. I love to use this method because it can make the noodles fluffy and easier to get the color.
- Marinating the shredded pork with all the marinating ingredients.
- Heat up around 2 tablespoons of oil and fry the shredded pork until it turns color. Don't overcook them because we will add continue heating for a while later.
- Add another 1 tablespoon of oil and fry the garlic and red onion until aromatic.
- Place rice noodles in. Add the bowl sauce. Mix for another half minute.
- Add shredded pork and the bowl sauce.
- Add bean sprouts and Chinese chives. Give everything a big stir fry to make sure everything is well combined.
- Drizzle sesame oil. Mix well and serve hot.
