Ingredients
- ⅔ ounce pork rinds
- 2 large egg
- 2 tablespoon heavy cream
- 1 teaspoon maple extract
- 1 teaspoon cinnamon
- 2 tablespoon coconut oil for frying
Instructions
- Measure out and prepare all the ingredients.
- Grind up the pork rinds in a blender or food processor until you get a smooth powder.
- Add the eggs, heavy cream, maple extract, and cinnamon to the blender. Blend again until you get a smooth consistency.
- Turn the stovetop on medium heat and add some of the coconut oil to a pan.
- Add the batter into the frying pan. Keep an eye out for bubbles forming in the middle and the edges looking cooked.
- Flip onto the other side and continue cooking, making sure the pancake is fully cooked. Repeat this process with the rest of the batter, adding coconut oil as needed.
