Pork Tacos Recipe
Description
The Pork Tacos Recipe begins with a 3-pound pork sirloin roast cooked slowly in Dr Pepper, which tenderizes the meat while infusing it with subtle sweetness. After the initial cooking, a mixture of enchilada sauce, sugars, garlic, cumin, and mild chili powder is added to deepen the flavor profile. The pork then cooks further until it is easily shredded, absorbing the sauce components thoroughly. This results in moist, flavorful pork suitable for filling tortillas.
The recipe’s tender, juicy pork pairs well with corn tortillas and fresh Pico de Gallo to bring freshness and texture contrast to the tacos. The combination is both aromatic and comforting. The balance of sweet with spices creates an accessible flavor widely enjoyed in tex-mex dishes.
This recipe is also designed with practicality in mind, making approximately one pound of pork per 3 people, useful for serving larger gatherings. Leftovers can be refrigerated for a few days or frozen for up to three months, maintaining flavor and texture when properly stored and reheated.
Ingredients
- 3 pound pork sirloin roast
- 16 ounces Dr Pepper soda
- 28 ounces enchilada sauce
- ¾ cup sugar
- ¾ cup brown sugar packed
- 2 tablespoon garlic minced
- ¾ teaspoon mustard powder dry
- 1 teaspoon cumin
- ⅓ teaspoon chili powder
- corn tortillas
- Pico de Gallo
Instructions
- Spray the slow cooker with cooking spray.
- Combine pork and Dr. Pepper in the cooker and cover. Cook on high for about 4 hours.
- After 4 hours, pour the remaining ingredients into a large bowl and whisk to combine. Add this mixture to your slow cooker and allow it to cook an additional 2-3 hours.*Note - after about 2 hours turn the heat to low just to let those flavors simmer a little longer, but 2 hours is usually sufficient. It's done when the pork is falling apart as you try to remove it from the cooker.
- Add pork to flour or corn tortillas and add any desired toppings.
Notes
- Plan about 1 pound of cooked pork per 3 people when serving a crowd.
- Keep the cooked pork warm in a crock pot or chafing dish until ready to serve.
- Store leftovers in an airtight container in the refrigerator for 3-4 days.
- Freeze leftovers for 2-3 months; thaw in the refrigerator before reheating.
