Pork Tenderloin Sandwich

  • 2 pork tenderloins
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • 2 buns of choice
  • sliced tomatoes
  • red onion sliced and grilled
  • lettuce
  • Sliced pickles

Instructions

  1. Heat your grill to medium high (350-400 degrees fahrenheit) and prepare your pork by rubbing it with the olive oil.
  2. In a small bowl combine your salt, pepper, garlic powder, cumin, and thyme. Rub your oiled pork with the spice mix to coat evenly.
  3. Place the pork tenderloins onto the heated grill and cook for 12-15 minutes on each side. Check the temperature of the pork for doneness, it should read 155 degrees fahrenheit in the thickest part of the pork.
  4. Slice your vegetables while pork is grilling, during the last 15 minutes of grilling your pork, grill your red onions, brush them with olive oil and place them on the grill.
  5. Grill the onions about 5 minutes on each side and remove from grill.
  6. Remove pork from the grill when it is fully cooked, allow it to set at room temperature for about 10 minutes. Cut the tenderloins into about 1 inch sections.
  7. To assemble sandwich, split your buns or rolls, spread some mayonnaise on each bun. Place some lettuce on the bottom bun, followed by your pork, tomatoes, grilled onions and pickles. Finish with salt and pepper to taste.
