Potato Chip Brownies

Easy chocolate brownies with potato chips. A fun new recipe for adding a touch of salty potato chips to a family favourite brownie bar.

Ingredients

  • 3 eggs
  • ¾ cup flavorless oil such as sunflower oil or canola oil
  • 3 tablespoon water
  • 1 teaspoon vanilla extract
  • 1 cup superfine granulated sugar or caster sugar
  • ½ cup light brown sugar (muscovado) firmly packed
  • 1 cup all purpose flour or plain flour
  • 1 cup cocoa powder
  • ½ cup powdered icing sugar
  • 1 teaspoon salt
  • 2 cups crushed potato chips plus extra for the top

Instructions

  1. Begin by preheating an oven to 350°F (175C/155C Fan) and lining an 8" square baking tray with parchment paper.
  2. In a bowl, mix together the crushed potato chips with 2 tablespoons of the brown sugar. Set this aside.
  3. In a large mixing bowl. whisk together the eggs, oil, water and vanilla.
  4. Using a separate bowl, stir together the granulated sugar, remaining brown sugar, powdered sugar, flour, cocoa powder and salt.
  5. Add the dry ingredients (the flour mixture) to the wet ingredients (the egg mixture). Stir together with a spatula until just combined, ensuring that no pockets of unmixed flour remain.
  6. Pour half of the batter into the prepared baking dish. Use a knife or offset spatula to spread gently to the edges and corners.
  7. Sprinkle the potato chip and sugar mixture over top, covering the brownie layer in an even coating of potato chips.
  8. Pour the remaining brownie batter over top of the potato chips (see note) and spread gently to the edges and corners.
  9. Bake in the centre of the preheated oven for about 45 minutes, checking until a toothpick inserted near the centre comes out mostly clean.
  10. Allow the brownies to cool in the pan for about 2 hours before removing and slicing.

Notes

  • When adding the top layer of brownie batter, it is best to spoon dollops of the batter over the top of the potato chips. Because the potato chips are loose, they are liable to be picked up and mixed into the batter, which is not the goal. Instead, you want to try to add the brownie layer without too much disturbance. Nudging dollops of brownie dough will be easier than trying to spread out from one place.
