Ingredients

  • 1 1/2 pounds Russet potatoes
  • 1 small onion
  • 2 1/2 tablespoons all-purpose flour
  • 2 large eggs
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons canola oil
  • 1 cup sour cream optional for serving

Instructions

  1. Peel and grate the potatoes and onion using a box grater or food processor.
  2. Place the grated potatoes and onion in a clean kitchen towel and squeeze out as much liquid as possible. Transfer to a mixing bowl.
  3. To the bowl, add flour, eggs, salt, and pepper. Mix until well combined.
  4. Heat the canola oil in a large skillet over medium-high heat. Spoon the potato mixture into the hot oil, flattening them with the back of the spoon to form pancakes.
  5. Fry until golden brown on both sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain.
  6. Serve hot with optional sour cream.
