Prawn Alfredo Pasta
Description
This Prawn Alfredo Pasta recipe begins with cooking spaghetti until tender. King prawns are sautéed in butter with garlic and seasoned simply with salt and black pepper, imparting gentle seafood flavor enhanced by the richness of butter. After removing the prawns, the pan is deglazed with reserved pasta water and heavy cream is brought to a simmer, creating a velvety sauce.
The cooked spaghetti and prawns are added back to the sauce along with grated Parmesan cheese, which cuts through the creaminess with its sharpness and depth. Freshly chopped parsley sprinkled on top adds a bright herbal note. The sauce clings to the pasta well, making each bite creamy and flavorful.
Serve hot as a main course. The dish pairs well with a crisp green salad to balance the richness. The recipe allows for optional seasoning with mild chili or garlic granules for extra flavor, and Parmesan can be substituted with another sharp hard cheese if needed.
Ingredients
- 180 g spaghetti
- 300 g king prawns raw
- 125 ml heavy cream or double cream
- 3 garlic cloves
- ⅛ teaspoon black pepper
- 4 tablespoon Parmesan Cheese grated
- 1 teaspoon salt
- 2 tablespoon parsley chopped
- 30 g butter
Instructions
- Cook the spaghetti according to the packet instructions.
- When it's cooked, reserve two tablespoons of water, then drain the rest, but don't rinse the pasta.
- Melt the butter in a pan over a medium heat, add the prawns, season them with salt and pepper, and add the chopped garlic.
- Cook the prawns on both sides until they turn pink.
- Remove the prawns from the pan, add the two tablespoons of water and the cream, and bring to a boil.
- Add the pasta to the pan, together with the parmesan, cooked prawns, and season with salt and pepper.
- Toss well to combine all the ingredients.
- Garnish with freshly-chopped parsley.
- Serve hot.
Notes
- Season prawns before cooking with salt and pepper; optional chili or garlic granules add mild heat and flavor.
- A splash of white wine can be added before cream for extra depth, but it is not required.
- Grated Parmesan cheese balances the richness of cream and butter with sharpness; substitute with another strong hard cheese if unavailable.
