Prawn Saganaki

Ingredients

Servings
  • 2 tbsp olive oil or olive oil cooking spray for slimming version
  • 1 onion very finely diced, large
  • 3 garlic minced, cloves
  • 1 tsp sugar
  • 1 tsp thyme dried
  • ½ tsp salt
  • ¼ tsp chili flakes
  • 2 tbsp tomato paste
  • 2 bay leaf
  • 240 g passata strained tomatoes /tomato purée, 1 cup
  • 400 g diced tomatoes crushed tomatoes, in juice, 14oz tin
  • 120 ml dry white wine or water
  • 450 g prawns raw jumbo, 1 pound; aka shrimp
  • 200 g feta cheese crumbled, 7 oz
  • parsley to garnish, chopped, or fresh thyme
  • salt to taste, to season
  • black pepper to taste, to season

Serving suggestions

  • bread crusty, to serve as a starter
  • rice steamed, to serve as a main

Instructions

  1. Heat the oil in a large oven-safe casserole dish. Sauté the onion over medium-low heat for 5 minutes, stirring, until slightly softened.
  2. Stir in the garlic, salt, sugar, thyme, chill flakes and bay leaves and cook for a couple of minutes.
  3. Add the passata, chopped tomatoes, tomato paste and wine and bring to a simmer.
  4. Cook, stirring occasionally, for 20-30 minutes until the tomato sauce has thickened.
  5. Stir in the prawns, mixing into the sauce until they turn pink, 2-3 minutes.
  6. Top with the crumbled feta (and drizzle with extra virgin olive oil if you like) and cook under a hot grill (broiler) until the feta starts to colour and melt.
  7. Check the seasoning and add salt and pepper to taste. Garnish with chopped parsley.
  8. Serve as a shared starter with plenty of crusty bread or as a main dish over rice.
