This pressure cooker pasta with sausage and spinach makes an easy one-pot dinner that is hearty, delicious and fast. Use your Instant pot to make this time-saving recipe that tastes just like a baked pasta for a perfect weeknight meal for the whole family.

Ingredients

  • 1 lb fresh Italian sausage in casings
  • 1 tablespoon olive oil
  • 1/2 cup chicken broth
  • .5 teaspoon powdered garlic
  • 1 tablespoon oregano
  • 1 tablespoon parsley
  • 1 lb pasta I used penne
  • 24 ounces marinara sauce
  • 2 cups water
  • 1 16 ounce bag fresh spinach

Instructions

  1. Turn your instant pot or similar pressure cooker to saute mode and add your oil to the pot.
  2. Sautee the sausage in the oil for 5-7 minutes or until brown.
  3. Add your broth and spices to the pot. Set your instant pot to 12 minutes to cook the sausage.
  4. Remove sausage and rinse the instant pot. Slice sausage into rounds. A slight pink is ok in the middle, it will finish cooking in the sauce.
  5. Add ziti to the bottom of your instant pot.
  6. Add sliced sausage on top of the pasta.
  7. Add the jar of sauce to your instant pot. Add two cups of water to the jar your sauce came in. Shake well with a lid on, then add to your instant pot. DO NOT STIR!
  8. If there is any noodles sticking out above your sauce, gently push them below the liquid level.
  9. Add the fresh spinach to your pot.
  10. Cook for 5 minutes on manual mode. Allow pressure to release naturally for five minutes, then push the button to release the pressure. Stir and serve hot!

Notes

  • For a cheesier pasta, stir in four ounces of shredded mozzarella cheese (half of a small block) as you are stirring at the very end. Cover with the lif for 1-2 minutes, then serve.
  • Save time by removing sausage from casings or using sausage without an outer casing. Sautee the loose sausage meat until cooked through, then rinse the pot and start again from where you add the dry pasta. This creates more of a meat sauce but is still tasty.
  • For pickier eaters try chopping the fresh spinach before adding it to the pot. You can also skip the spinach or use half of the spinach and the recipe will still be delicious.
