Pressure Cooker Spare Ribs with Black Bean Sauce

Pressure Cooker Spare Ribs with Black Bean Sauce combine pork ribs marinated in a savory mix including black bean sauce, soy, Shaoxing wine, ginger, garlic, and sesame oil. Quickly cooked under high pressure, the ribs become tender while absorbing the marinade’s strong umami flavors. The dish is garnished with green onions and optionally fish sauce before serving, offering a fusion of rich, aromatic, and slightly sweet-savory notes in a convenient recipe form.

Description

This recipe involves marinating pork spare ribs in a black bean sauce-based mixture featuring soy sauce, Shaoxing wine, grated ginger, minced garlic, sesame oil, sugar, and white pepper. After 25 minutes of marination, the ribs are mixed with cooking oil and coated in cornstarch and water to help achieve a light coating before cooking.

The ribs are then cooked in a pressure cooker above water on a steam rack under high pressure for 15 minutes, followed by a natural pressure release. This method softens the meat while locking in the marinade flavors. The ribs can be seasoned with fish sauce and garnished with green onions after cooking to enhance the taste just before serving.

This approach reduces traditional long braising times while maintaining tender texture and flavor infusion from fermented black bean sauce and accompanying seasonings. It serves as a distinctive main dish with a savory, aromatic sauce coating the pork ribs.
