Pressure Cooker Stewed Chicken with Corn (Pollo Guisado con Maiz)

This Pressure Cooker Stewed Chicken with Corn combines skinless chicken drumsticks simmered in a savory tomato-based sauce infused with garlic, cumin, and fresh cilantro. The addition of halved corn on the cob cooks alongside the chicken, absorbing flavors and adding sweetness. Prepared quickly in a pressure cooker, this results in tender meat with a richly seasoned broth.

Description

The recipe starts by seasoning chicken drumsticks with salt and garlic powder for basic savory flavoring. Onions, scallions, tomatoes, and crushed garlic are sautéed to soften and develop aroma before adding chopped cilantro and canned tomato sauce. A blend of chicken bouillon, cumin, and water creates a flavorful cooking liquid.

Chicken pieces are placed into the sauce, topped with halved corn on the cob to cook simultaneously under high pressure. This method tenderizes the chicken quickly while allowing the corn to soak up the sauce's spices. Once cooked, the dish is garnished with additional cilantro for fresh herbal notes.

The dish can alternatively be cooked on the stovetop by simmering longer at low heat, adding corn near the end. It pairs well with rice or warm tortillas as part of a hearty meal.
