Prettiest Sweet Potato Casserole Recipe

This Prettiest Sweet Potato Casserole features thinly sliced sweet potatoes stood on end in a casserole dish, tossed with avocado oil, salt, cayenne pepper, and maple syrup, then baked until tender and caramelized. Topped with toasted, peppered pecans, it offers a combination of soft, sweet, and slightly spicy layers complemented by crunchy, savory nuts, making it a visually striking and flavorful side dish.

Description

The recipe begins by slicing sweet potatoes thinly—preferably with a mandoline—to ensure even cooking and a delicate texture. They are mixed with avocado oil, salt, and a touch of cayenne pepper, then arranged vertically in a baking dish and baked covered to soften. After an initial baking period, the casserole is uncovered and maple syrup is drizzled over the top to add sweetness and assist caramelization.

While the sweet potatoes finish baking uncovered, pecans are toasted in butter and black pepper, creating a spicy, buttery crunch that contrasts the tender potatoes. The dish is then broiled briefly to add slight browning on the top before sprinkling the pecans over the casserole.

This casserole works well as a savory-sweet side for holiday meals or dinner parties. The use of cayenne and black pepper adds a subtle heat balance to the natural sweetness of the potatoes and maple syrup. The recipe includes tips for watching broiler heat closely to prevent burning while achieving a pleasing golden finish.

Ingredients

Servings
  • 4 lbs sweet potato sliced ⅛ inch thick
  • 3 tablespoons avocado oil
  • 1 teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 3 tablespoons maple syrup
  • 1 cup pecans
  • 1 tablespoon butter vegan, if needed
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees. Cut the sweet potatoes, preferably with a mandoline, and place them in a large bowl.
  2. Add the avocado oil, salt, and cayenne to the bowl and carefully mix the sweet potatoes.
  3. Add the sweet potatoes to your casserole dish so that they stand on end - see picture. Cover the casserole dish with a lid or foil and bake for 30 minutes.
  4. Take the casserole out of the oven and remove the foil or lid. Pour the maple syrup over the top and put it back into your oven, uncovered, for 40 minutes.
  5. While the casserole is baking, make the peppery pecans. Heat the butter in a large frying pan over medium-high heat. Add the pecans and let them toast until they begin to smell fragrant, about 4-5 minutes. Remove them from the heat and stir in the pepper.
  6. Turn your oven to broil (see notes) and broil the casserole for 5-10 minutes, or until the top starts to brown. Remove the casserole from the oven and sprinkle the pecans over the top.

Notes

  • Carefully monitor broiler temperature to avoid burning the casserole top; some dark spots are acceptable.
