  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup vanilla protein powder Paleo-friendly
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 4 large eggs
  • 1/4 cup unsweetened almond milk or any other dairy-free milk
  • 2 tablespoons melted coconut oil
  • 1 teaspoon vanilla extract
  • Optional toppings: fresh berries sliced bananas, nuts, maple syrup

Instructions

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together the almond flour, coconut flour, protein powder, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, almond milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Let the batter sit for a few minutes to allow the coconut flour to absorb the liquids.
  5. Grease the preheated waffle iron with coconut oil or cooking spray.
  6. Spoon the waffle batter onto the hot waffle iron, spreading it evenly. The amount of batter will depend on the size of your waffle iron.
  7. Close the waffle iron and cook for about 3-5 minutes, or until the waffles are golden brown and cooked through.
  8. Carefully remove the waffles from the iron and transfer them to a plate.
