Ingredients
Crust:
- 2 Tbsp quick oats 10g
- 1 Tbsp brown sugar I used Swerve
- 1/2 Tbsp butter melted, light, 7g
Peanut Butter Filling:
- 1/4 cup Cool Whip can sub for dairy-free, light, 18g
- 2 Tbsp Greek yogurt can sub dairy-free Greek yogurt, plain, nonfat, 30g
- 2 Tbsp peanut butter powder
- 1 tsp sweetener more to taste - you can use Swerve, monk fruit, sugar, etc.
- 1/2 tsp vanilla extract
- Pinch salt
- Cool Whip for topping, optional, light
Instructions
- Combine oats, brown sugar and butter together well. Spoon into a small jar, pressing down and along the sides.
- Mix together the cool whip, yogurt, peanut butter powder, sweetener, vanilla and salt until well combined.
- Spoon over top of crust and smooth the top out. Top with additional cool whip, if desired.
- Freeze for 1 hour or refrigerate for 3-4 hours. Defrost for 10 minutes before serving.
Notes
- Store multiple prepared pies in jars covered airtight in the refrigerator for up to one week or freeze up to three months.
- When frozen, defrost the pie jars for about 10 minutes before serving to reach an ideal creamy texture.
