Protein Peanut Butter Pie in a Jar (Single-Serve!)

This Protein Peanut Butter Pie in a Jar is a single-serving dessert featuring a quick oat and brown sugar crust pressed into a small jar. The filling combines Cool Whip, Greek yogurt, peanut butter powder, sweetener, vanilla, and salt, creating a creamy peanut butter-flavored layer. The dessert can be topped with additional Cool Whip and chilled or frozen before serving, making a convenient, portioned treat.

Description

The recipe starts by mixing quick oats, a sweetener substitute for brown sugar, and melted butter to form a crumbly crust pressed into a jar. The peanut butter filling is whipped together from Cool Whip, Greek yogurt, peanut butter powder, a sweetener, vanilla extract, and a pinch of salt to balance the flavors.

Spoon the filling over the crust and smooth the surface, optionally topping with more Cool Whip. The dessert is chilled in the refrigerator for several hours or frozen for quicker setting and convenience. Before serving, it is recommended to defrost for about 10 minutes to achieve the right texture.

This recipe is suitable for pre-made individual portions that can be stored in an airtight container for up to a week refrigerated or up to three months frozen. The combination of dairy and peanut butter powder provides protein and a creamy mouthfeel with easy assembly.
