Protein Rice Pudding is prepared by simmering rinsed rice in whey combined with honey, almond butter, and cinnamon. Description

This rice pudding begins by blending whey liquid with honey, almond butter (if used), and cinnamon, then heating the mixture. Rinsed rice is added to the pot, and the ingredients are mixed well. After bringing the mixture to a boil, it simmers with the lid on for about 20 minutes, allowing the rice to absorb the flavors and soften. If the rice is still firm, cooking continues briefly with the lid replaced.

The pudding develops a creamy, thick texture as the rice cooks in the flavorful whey base sweetened naturally with honey and enhanced with cinnamon and optionally almond butter. Adding cream at the end enriches the dish, giving it a smooth mouthfeel and mild richness.

Ingredients

  • 2 pints whey 4 cups, fresh liquid
  • 16 oz rice 2 cups. See notes under ingredients section as to what type of rice is best.
  • 2 tsp cinnamon
  • 3 tbsp honey
  • 2 tbsp almond butter optional
  • 8 oz cream or condensed mill

Instructions

  1. Place the liquid whey, honey, almond butter and cinnamon in a pot. Blend together and heat through.
  2. Place the rice in a sieve and run under cold water until the rice water is clear. Drain off excess water and add the rinsed rice to the pot.
  3. Blend well together.
  4. Place the lid on (very important). Bring the liquid to a boil, then simmer for 20 minutes.
  5. After 20 minutes, remove the lid and test the doneness of the rice. If there is still a bite, then replace the lid and cook for a further 5 minutes.
  6. Once the rice is at a desired level of doneness, add your desired amount of cream.
