Pumpkin Bars with Cream Cheese Frosting
Description
This recipe uses eggs, sugar, canola oil, and pumpkin puree as the wet ingredients, paired with flour, baking powder, baking soda, cinnamon, and salt for the dry mix. The batter is beaten until fluffy, then baked in a greased rectangular pan until just set. Once cooled, the bars are topped with a frosting made by creaming softened cream cheese, butter, and vanilla, then gradually adding powdered sugar and cinnamon to combine. The resulting bars have a moist texture with a spiced flavor from the pumpkin and cinnamon, complemented by the smooth, creamy frosting.
They can be served as a dessert or snack, with the option to store them chilled to keep the frosting stable. The bars can also be baked ahead and frosted just before serving, retaining freshness and flavor. Storing properly in an airtight container prevents drying and maintains texture.
The pumpkin's natural moisture and spice in the batter create a soft crumb that contrasts with the rich frosting, making these bars a seasonal treat suited for autumn or any occasion where a spiced dessert is desired.
