Description

Pumpkin Butter is a rich, spiced spread made by cooking pumpkin puree and apple juice with brown sugar and a blend of warm spices including cinnamon, ginger, nutmeg, and cloves. The mixture simmers gently until it thickens to a spreadable consistency. The sugars and spices meld with the natural pumpkin flavor to create a smooth, sweet, and aromatic spread that holds together well without added butter.

This versatile butter substitute can be used in recipes in place of butter at a one-to-one ratio or enjoyed simply on bread or crackers. It stores well in the refrigerator for up to two weeks or can be frozen for longer preservation. Because of its low acidity, it is not safe for home canning.

  • 15 oz pumpkin puree canned
  • 1 c. apple juice
  • 1 tsp ground ginger
  • ½ tsp cloves ground
  • ¾ c. light brown sugar
  • 1 tsp ground nutmeg
  • 2 tsp ground cinnamon

Instructions

  1. In a large dutch oven or saucepan combine pumpkin, apple juice, spices and sugar. Stir well. Heat over medium heat and bring mixture to a boil.
  2. Reduce heat and simmer for 30 minutes or until thickened, stirring frequently.
  3. Cool and transfer to airtight container in the refrigerator until serving.

Notes

  • Do not can pumpkin butter at home due to low acidity which can allow bacterial growth.
  • Can be substituted for butter in recipes using a 1:1 ratio.
  • Store pumpkin butter refrigerated in an airtight container for up to two weeks.
  • Freezing in an airtight container extends storage up to three months.
  • Cooking in a crockpot on low for 3-4 hours is an easy alternative to stovetop simmering.
